A New Chapter Begins: Chardonnay
Every wine begins long before the bottle.
It begins with a place, a grape, and an idea of what that grape could become. This season, House of Pan is beginning a new journey with Chardonnay.
The wine is not ready yet. In fact, we are only at the beginning. Over the coming months, we will share the process step by step, from the vineyard and harvest to pressing, fermentation, ageing, and eventually bottling.
Why Chardonnay?
Chardonnay is one of the world’s most expressive grape varieties. Depending on where it grows and how it is handled in the winery, it can be fresh and mineral, rich and textured, or somewhere beautifully in between.
For our first Chardonnay, we chose grapes from the highlands of Kefraya in Lebanon’s Bekaa Valley. Warm days help the fruit develop, while cooler nights preserve its freshness and natural acidity.
Our goal is to create a Chardonnay that reflects both its Lebanese origin and the House of Pan character: expressive, generous, carefully crafted, and never ordinary.
The First Step
The grapes have been harvested and gently pressed. The fresh juice is now beginning its transformation into wine.
At this early stage, patience matters. The juice is clarified before fermentation so that the wine can develop with greater purity and precision. Fermentation will then take place at a controlled temperature, allowing the fruit’s delicate aromas and freshness to remain at the centre of the wine.
There is still a long way to go, and the wine will continue to change throughout the process. That is part of the beauty of winemaking. You begin with an intention, but the fruit and the vintage always have something of their own to say.

We will be documenting our Chardonnay as it develops, sharing the decisions, challenges, and small moments that shape it along the way. Not just the finished bottle, but everything that happens before it reaches your glass.
Our first Chardonnay has begun its journey.
