ENVY begins as Syrah, fermented slowly to build depth while holding on to the grape’s vibrant fruit character.

Just before fermentation reaches dryness, while a small amount of natural grape sugar still remains, the process is deliberately halted by fortification with high-proof wine spirit. The sudden rise in alcohol stops the yeast in its tracks, preserving that remaining sweetness along with the fresh, generous fruit of the Syrah.

The result is an off-dry wine at 18% Alc./Vol. and 22 g/L residual sugar — rich without becoming heavy, with ripe blackberry, black cherry and plum carried by warmth, softness and a lingering fruit-driven finish.

Nothing is added to create the sweetness. It is simply captured before fermentation can take it away.
